      The devotion of Puglia to the Madonna has very ancient roots, with the proclamation of the Immaculate Virgin, on December 8, 1854, Puglia celebrates the new anniversary with the spontaneous lighting of bonfires in various cities and provinces of Puglia.

      La gente, assiepata intorno ai fuochi, usa mangiare le frittelle o le pettole.

      In Gallipoli, on the eve of the Immaculate Conception, it is traditional to fast. The only food allowed is puccia, bread seasoned with cheese, tomato and black olives, imported by Greek colonists.

      In the cities of Bisceglie and Barletta a large bonfire is lit which according to some symbolizes the elimination of original sin and the end of the old year. Sometimes it is understood as a symbol of purification and is linked to the ancestral origins of man, when it was used to drive away wild beasts.

      To light the bonfires, also called fami (derived from the Greek and meaning torch), in Bisceglie, according to the handed down culture, the boys went from house to house to collect firewood and the burning coals at the end, were distributed among the organizers of the fami, to heat their homes.

      Something similar happens with the torches that go in procession in various municipalities of Salento. In Nardò in fact, at dusk, the devotional torchlight procession in honor of the Immaculate Conception parades. The rite ends with the placing of a floral tribute on the spire, at the feet of the Virgin. An operation that requires the help and collaboration of the firefighters.

      Even in Supersano, in the province of Lecce, the statue of the Madonna is carried on shoulders in a town lit by flames, distributed between balconies and windows.
