Raisin Wheat Orecchiette are a true homage to the peasant memory of Puglia, a gastronomic symbol encompassing history, territory and flavour. Made with , semolina and toasted wheat flour, these orecchiette are distinguished by their characteristic dark colour and the strong, smoky flavour of burnt wheat, once obtained from the natural roasting of the remaining ears in the fields.
The traditional domed shape, perfect for picking up sauces and condiments, combined with the rough and porous texture, makes it an excellent pasta for rustic and genuine dishes. Their handmade production respects ancient methods, thus enhancing the quality of the raw material and its slow and natural processing.
